Creamed Spinach, But Make It a Power Move
Tonight’s dinner is not apologizing.
There’s a steak on the plate. A real steak, with a proper sear.
And next to it? Creamed spinach that didn’t come here to be a “healthy option.”
This is the kind of creamed spinach you order at a steakhouse because you’re done pretending restraint is a virtue.
Ingredients (No Substitutions, No Shame)
▢ 2 pounds fresh spinach
▢ 2 tablespoons butter
▢ ½ medium onion, chopped
▢ 2 cloves garlic, minced
▢ ¾ cup heavy cream (yes, heavy)
▢ 4 ounces cream cheese – I think I only have an ounce or two in the fridge, so I’ll add more cream… IDK. I’ll make it work.
▢ 1 cup freshly grated Reggiano
▢ Pinch of nutmeg (don’t get cute, just a pinch)
▢ Salt & pepper to taste
How This Goes Down
Butter in the pan. Medium heat.
Add the onion and let it soften like it’s had a long day.
Garlic goes in next. Just until it smells like you’re doing something right, don’t burn it! Keep an eye on it.
Now the spinach. All of it.
Yes, it looks like too much. No, it isn’t.
Watch it collapse. It always does.
Turn the heat down. This is not a sprint.
Pour in the cream.
Add the cream cheese and stir until it’s smooth, glossy, and clearly not here to behave.
Parmesan follows.
Then, nutmeg, salt, and a generous grind of pepper.
Taste it.
Then taste it again because confidence comes from confirmation.
Serving With Steak (As the Good Lord Intended)
This spinach doesn’t sit quietly on the side.
It stands up to the steak. Challenges it, even.
Ribeye. Strip. Filet. Whatever you’ve got, I’ll hold.
